Peanut Zucchini Noodle Bowl

Who doesn’t love peanut sauce? Another versatile dish. If you want to make it a family fave you can substitute zucchini noodles for rice noodles, you can also substitute edamame for your favourite protein source. Enjoy another quick and easy recipe that is really delish.

Peanut Zucchini Noodle Bowl


2-4 zucchini spiraled into noodles (can buy already done for you at store)

1 tablespoon avocado or coconut oil

1 cup frozen edamame

1 cup shredded red cabbage

1 cup shredded carrots

1/3 cup chopped peanuts

optional – dash of fresh lime juice or top with chopped cilantro

Peanut Sauce


1 tbsp avocado or coconut oil

3 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon curry powder (optional but recommended)

1/3 cup all natural peanut butter

½ cup water, plus extra as needed

2 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon organic coconut sugar


  1. Make sauce - In medium pot add oil over medium heat. Stir in garlic, ginger, and curry powder and cook until fragrant (about 30 seconds). Stir in the remaining ingredients and stir until well combined.

  2. Prepare vegetables - spiral zucchini, shred 1-2 carrots, chop 1 cup of red cabbage.

  3. In a large frying pan over medium heat add oil and all veg (zucchini, cabbage, carrots and edamame) cook 1-2 minute then add sauce and stir until well combined.

  4. Serve warm - option to top with crushed peanuts, fresh lime juice and cilantro.

Notes - can add other veggies noodles or swap for rice noodles.
