Pumpkin Spiced Doughnuts & Protein Balls

Thanksgiving is here and I couldn’t be more thrilled, it’s one of my favourite holidays as it’s all about coming together with our family or loved ones and sharing what you are truly thankful for this year.

People often associate holidays with over eating and turkey comas so I wanted to share a little inspiration and healthy recipes so you feel fab through this holiday. Whip and share one or both of these healthy dessert recipes this weekend.

Pumpkin Spiced Doughnuts

Makes 6 doughnuts

 Ingredients

¾ cups almond meal

¼ cup vanilla protein powder

1/3 cup pumpkin puree (1/4 plus 2 tbsp?)

1-2 tablespoons honey

1 egg

1 teaspoon baking powder

1 teaspoon pumpkin spice

1 teaspoon cinnamon

pinch of salt

Directions

1.     Preheat oven to 350 ° F. Grease doughnut pan with coconut oil.

2.     In large bowl add all ingredients, once all ingredient are added stir mixture to combine.

3.     Spoon mixture in doughnut tray and bake until browned and cooked through 12-15 minutes.

4.     Let sit for 10 minutes and remove doughnuts from pan.

Pumpkin Spiced Protein Balls

 Makes 12-15 balls

Ingredients

1 cup oat flakes (or oat flour)

¼ cup vanilla protein powder

1/3 cup coconut flakes

1/3 cup pumpkin puree

¼ cup honey

1 teaspoon pumpkin pie spice

1 teaspoon cinnamon

Directions

1.     Place all ingredients in a large bowl and stir well to combine.

2.     Roll into 1-inch balls makes 12- 15 balls. Store in air-tight container in fridge for up to one week or freeze up to 1 month.
