Happy Mother’s Day to all of the wonderful mom’s out there!

Today is your day and I am wishing you a day filled with love, family and a day off from cooking and choring (yes, that’s a word).  I can’t think of a better way to start the day than with a delicious nourishing smoothie bowl.

Blueberries and dark berries are one of my favourite fruits to add to smoothies because they are so nutritious. They are high in antioxidants bioflavonoids, high in Vitamin A and C, and add a healthy dose of fibre. Berries are lower on the glycemic index meaning they won’t spike your blood sugar levels which is ideal for controlling sugar cravings.

So dads and kiddos here is an easy recipe to make mom breakfast in bed.

Bonus points: serve up this breakfast with a note of gratitude for mom, be sure to tell her what you love about her or what does she do that makes your heart so grateful, let her know she will love it.

The Recipe

BLUEBERRY BLISS SMOOTHIE BOWL

Makes: 1-2 servings

Prep Time: 5 minutes

Ingredients

½-1 cup frozen blueberries

¼ avocado (or ¼ cup frozen avocado chunks)

¼ cup vanilla protein powder

½-1 cup unsweetened vanilla almond milk

1 frozen banana, peeled and sliced (can do half of a banana and add 2 ice cubes)

Toppings

Fresh berries – blueberries, raspberries, strawberries

Chia seeds

Coconut flakes

Hemp seeds

Pumpkin Seeds

Dark chocolate – optional

Directions
  1. Add frozen blueberries, avocado, protein powder, frozen banana, and almond milk into a blender or I like to use my Ninja. Blend on high until smooth.

Note – Mixture should be thick closer to an ice cream or Greek yogurt consistency if you are making it as a smoothie bowl. If the mixture is too runny your ingredients will sink. You can easily thicken your mixture by adding more frozen berries, banana or ice cubes.

  1. Pour smoothie mixture into a beautiful bowl and top with desired super food ingredients.
