Blueberry Bliss Smoothie Bowl

Happy Mother’s Day to all of the wonderful mom’s out there. Today is your day, and I am wishing you a day filled with love, family and a day off from cooking and choring (yes, that’s a word).  I can’t think of a better way to start the day than a delish smoothie bowl.

So dads and kiddos here is an easy recipe to make mom breakfast in bed! Bonus points if you serve this up with a little gratitude note for mom – share with mom the one thing that makes her extra special or something you are truly grateful for.

Blueberry Bliss Smoothie Bowl

Makes 1-2 servings

½-1 cup frozen blueberries

¼ avocado (or ¼ cup frozen avocado chunks)

¼ cup vanilla protein powder

½-1 cup unsweetened vanilla almond milk

1 frozen banana, peeled and sliced (can do half of a banana and add 2 ice cubes)

Fresh berries – blueberries, raspberries, strawberries

Chia seeds

Coconut flakes

Hemp seeds

Pumpkin Seeds

Dark chocolate – optional

  1. Add frozen blueberries, avocado, protein powder, frozen banana, and almond milk into a blender or I like to use my Ninja. Blend on high until smooth.

Note - Mixture should be thick closer to an ice cream or Greek yogurt consistency if you are making it as a smoothie bowl. If the mixture is too runny your ingredients will sink. You can easily thicken your mixture by adding more frozen berries, banana or ice cubes.

  1. Pour smoothie mixture into a beautiful bowl and top with desired super food ingredients.
