Pumpkin & Split Pea Soup

As the seasons change so does our food preferences and this reflects back to what is available or “in season”. Summer is all about what’s fresh and raw fruits and veg, BBQ, lots of salads and cool foods. As fall rolls around and the temperatures become cooler our bodies crave soup, warmth and comfort.

Eating seasonally has many benefits the first is that the food typically tastes better, think of fresh tomatoes locally grown in the summer, they taste very different than the tomatoes you can buy at the grocery store in the summer. When fruits and veg are ripened naturally and picked when they have ripened on a vine or harvested at the right time it has so much more flavour and nutrients. Who doesn’t want food that tastes better and has a higher nutritional value??

The second benefit is that eating seasonally is usually most cost effective and easier for the budget and reduces your carbon footprint. That is one of my biggest tips for keeping your grocery bill lower is to eat seasonally or what’s on sale that week. When there is an abundance of certain produce because the crop is in season the cost goes down. Check out what’s in season in chart below.

The last benefit I will share today is that it supports your body’s natural nutritional needs. Winter veggies offer comfort and root veggies are perfect for hot meals, healthy soups, stews, casseroles etc. Summer foods such fresh fruit and veg provide us with nutrients that help protect against sun damage, give us energy for the longer summer day and make a delish cool meal like a salad when it’s too hot to cook.

Mexican Pulled Chicken Tacos

I hope everyone had a great first week back at school. I know our home was a little sad that summer vacay was over but we are all loving the routine that back to school brings. I am not going to lie over the summer meal prepping and cooking wasn’t always on point. This week a huge focus for me was to get back into prepping lots of healthy meals - specifically family dinners, lunches and lots of snacks.

I got the kids to help with snack prep, they whipped up cookies and energy balls from the cookbook and made some with sunbutter so they would pack them in their lunches for school. I planned and prep a weeks worth of delicious dinners.

I was recently on a cooking video sharing easy dinners to whip up for moms, and this is one of my new recipes that I shared with the viewers. So obviously my next move was to share it here with all of you. The reason I love this dish is because it is so versatile, it can be made for dinner or as a freezer meal and it’s a hit with the whole fam. Honestly these types of meals are my fav because they are easy to make, flavourful, healthy and just really really good!

Buffalo Turkey (or Chickpea Tacos)

I love tacos! I mean who doesn’t?

Our fam could easily have this as a dinner one night per week but to avoid food ruts and boredom I am always on the look out to change up this basic recipe. Last week I posted a new Peanut Taco Recipe in a Lettuce Wrap and this just sparked more inspiration for more taco creations. This week I want to share my new Buffalo Turkey Tacos which again I am serving on a lettuce wrap for myself. As most of you know I am running a 30 day clean eating challenge and we aim to avoid gluten and dairy among other things, and lettuce wraps are a really simple and healthy alternative to wraps. This is one of my favourite recipe for a night where I am craving something a little less “healthy” and a little more fun or daring.

Peanut Chicken or Chickpea Tacos In a Lettuce Wrap

 This past week I was feeling really creative in the kitchen and I took one of the recipes from my new cookbook - The Peanut Slaw Bowl and I wanted to make a spin on it and turn it into dinner. The chicken and chickpea tacos were the outcome and I couldn’t be more pleased with how easy and delicious this recipe is. Honestly dinner is ready in under 20 minutes and it can be a hit with the whole family. I do mine in lettuce wraps which makes it gluten free and lower in calories which suits my nutritional needs (as I am currently running a 30 day clean eating challenge if you want to join the fun click here https://www.pamrocca.com/custom-meal-plans) and my family enjoys their tacos in whole wheat wraps with no cilantro which suits their needs.

This recipe shows that you can eat clean and your food can and should be so flavourful, I would never post something that was bland or boring. That’s just not me. I want to get everyone excited to eat more veggies, to think twice about what we are putting in our bodies and make it so simple that there really are no excuses to not eat healthier. Because honestly you guys, what we eat affects how we feel each and every day…and I want you to all feel fantastic!
