Peanut Chicken or Chickpea Tacos In a Lettuce Wrap

 This past week I was feeling really creative in the kitchen and I took one of the recipes from my new cookbook - The Peanut Slaw Bowl and I wanted to make a spin on it and turn it into dinner. The chicken and chickpea tacos were the outcome and I couldn’t be more pleased with how easy and delicious this recipe is. Honestly dinner is ready in under 20 minutes and it can be a hit with the whole family. I do mine in lettuce wraps which makes it gluten free and lower in calories which suits my nutritional needs (as I am currently running a 30 day clean eating challenge if you want to join the fun click here https://www.pamrocca.com/custom-meal-plans) and my family enjoys their tacos in whole wheat wraps with no cilantro which suits their needs.

This recipe shows that you can eat clean and your food can and should be so flavourful, I would never post something that was bland or boring. That’s just not me. I want to get everyone excited to eat more veggies, to think twice about what we are putting in our bodies and make it so simple that there really are no excuses to not eat healthier. Because honestly you guys, what we eat affects how we feel each and every day…and I want you to all feel fantastic!

Healthy Double Chocolate Muffins

As a mom one of the biggest struggles during the school year is keeping lunch packing fun and fresh. I use to struggle hard with wondering what the heck to pack in my kids lunches. My goal this year was to avoid packaged snacks and lunch options to not only know what is in their food but to also help with environmental waste. In turn this has allowed me to save money on our groceries as well. A lot of the processed snacks can add up!

We buy bananas every week and if we ever have any really ripe ones left that always equals fresh muffins. We try to avoid food waste by using up what we can. So a few weeks ago I had some really ripe bananas and created this awesome recipe for school lunches and an after school snack. They were such a hit with the neighbourhood kids that they disappeared right away. In that moment I knew I had to share this recipe with all of you. I know it’s May and we are nearing the end of the school year and this is usually when our lunch creativity is at it’s lowest, so hopefully this recipe helps you out moms.

Ditch The Labels Already

Why I think we need to ditch the labels and just eat in a way that feels healthy for our own bodies.

Don't get me wrong I am all for people choosing a healthy eating lifestyle that works for them, but the one thing I have noticed through my years in the field is that these labels and trends come and go. Hello zone diet, atkins, south beach??? Ring a bell anyone?

I have ALWAYS been a big fan of plain old healthy eating. But this doesn't sell, it's not catchy and no one every says "I am following the healthy eating diet". We are so screwed up with the overwhelm of "health" information that we don't even know what healthy eating is anymore. People also love to jump on board with the next big thing. I get it, it sells. I am not trying to be pessimistic here, I know that there are people out there that have it figured out and LOVE that...but the reality is that I work with thousands of people who struggle with food their weight and the way they feel in their bodies.
