I hope everyone had a great first week back at school. I know our home was a little sad that summer vacay was over but we are all loving the routine that back to school brings. I am not going to lie over the summer meal prepping and cooking wasn’t always on point. This week a huge focus for me was to get back into prepping lots of healthy meals - specifically family dinners, lunches and lots of snacks.
I got the kids to help with snack prep, they whipped up cookies and energy balls from the cookbook and made some with sunbutter so they would pack them in their lunches for school. I planned and prep a weeks worth of delicious dinners.

For us the longer days and warmer weather means more adventures outdoors, beach days and cottage time. This past week I was feeling really creative in the kitchen and I took one of the recipes from my new cookbook - The Peanut Slaw Bowl and I wanted to make a spin on it and turn it into dinner. The chicken and chickpea tacos were the outcome and I couldn’t be more pleased with how easy and delicious this recipe is. Honestly dinner is ready in under 20 minutes and it can be a hit with the whole family. This recipe shows that you can eat clean and your food can and should be so flavourful, I would never post something that was bland or boring. That’s just not me. I want to get everyone excited to eat more veggies, to think twice about what we are putting in our bodies and make it so simple that there really are no excuses to not eat healthier. I do a lot of cooking classes and I recently did a few Keto workshops and the reason I
did them was because I wanted people to do it the “right” or most healthy way if
they were going to follow this trend. One of the dishes we created is my Cashew
chicken and it was such a huge hit with everyone. It also happens to be one of my

As a mom one of the biggest struggles during the school year is keeping lunch packing fun and fresh. I use to struggle hard with wondering what the heck to pack in my kids lunches. My goal this year was to avoid packaged snacks and lunch options to not only know what is in their food but to also help with environmental waste. In turn this has allowed me to save money on our groceries as well. A lot of the processed snacks can add up!
We buy bananas every week and if we ever have any really ripe ones left that always equals fresh muffins. We try to avoid food waste by using up what we can. So a few weeks ago I had some really ripe bananas and created this awesome recipe for school lunches and an after school snack. They were such a hit with the neighbourhood kids that they disappeared right away. In that moment I knew I had to share this recipe with all of you. I know it’s May and we are nearing the end of the school year and this is usually when our lunch creativity is at it’s lowest, so hopefully this recipe helps you out moms.
