Chickpea Tacos

I work with a lot of people and one of the biggest excuses I hear over and over again is “Pam, I just don’t have time to cook”.  I get it, we are all busy. But valuing and prioritizing meal prep is huge investment in you and your health (and your families if you have one) that will be so worth it!

I am here to tell you from the most loving place:

  1. You are worth it

  2. You can make the time… I just know it

  3. Healthy eating doesn’t mean you have to spend hours in the kitchen

This recipe below is a perfect example of a recipe that can be whipped up in 15-20 minutes or less you guys. You can also customize this recipe for the entire fam. I love my chickpea tacos in lettuce wraps and loaded with a rainbow of veg. My kiddos love it in a wrap with avocado and cucumbers on the side. Whatever your variation it’s all good, chickpeas are a great source of protein and carbs and add some avocado for your healthy fats and some veg and you have an easy, delish dinner loaded with nutrients. The best part of all of this is when you make the time to eat well, you feel fantastic which gives you more energy to do the things you love. Spring Detox Quinoa Salad

Red Lentil Dal

Did you know lentils are from the legume family? They are often categorized by their colour – green, red or brown. Red lentils are perfect for Dal as they cook quickly and have a sweet flavor. Lentils are an excellent plant-based protein source, a great source of iron, fibre, potassium, zinc and B vitamins. Garlic & onion are prebiotics, which feed probiotics – they work together to improve our gut health. Ginger and turmeric add great flavor to this meal but also have anti-inflammatory properties. Indian spices are warming for the body, which makes this the perfect comfort food for this time of year.

Not only is this dish healthy and delicious it is budget friendly too. A bag of red lentils is typically under $3 at most places depending on the size of the bag. Perhaps the best part about this recipe is that it only uses 1 pan and can be made in under 30 minutes.

Real food wins every time. It doesn’t have to be difficult to make something homemade, and this way you know exactly what you are putting in your body. Ingredients that have nutrients that you body needs and cutting out anything processed.

Mushroom Stroganoff

This is a vegan family fave that again is really versatile. If you don’t do mushrooms you can easily substitute for your favourite protein source. If you have an allergy to nuts you can omit cashews and substitute with cream.

One of my favourite things about this recipe is that it feels and tastes like comfort food and it can whipped up in under 20 minutes. As a mom of 3, you will notice a trend of quick and easy meal ideas because I get it. Time can be a huge factor when it comes to healthy eating, I am here to make it easy, delicious and remove time as an excuse for getting a good meal on the table.
